Ingredients:
• Olive oil
• 1 onion, roughly chopped
• 2 cloves garlic, finely chopped
• 2 cans (410 g each) cherry tomatoes
• 10 ml (2 teaspoons) Worcestershire sauce
• 15 ml (1 tablespoon) soft brown sugar
• Salt and freshly ground black pepper
• 300 g sausage of your choice
• 250 ml (1 cup) fresh basil
Method:
- Heat 30 ml (2 tablespoons) olive oil in a saucepan and fry the chopped onion and garlic for 1 minute.
- Add the canned cherry tomatoes and bring to the boil.
- Add the Worcestershire sauce, soft brown sugar and salt and pepper to taste. Simmer for a few minutes until fragrant.
- In the meantime push the sausage meat out of the casings and roll into small balls.
- Heat a little more oil in a frying pan and gently fry the meatballs until cooked through.
- Add the meatballs to the soup and heat through.
- Garnish the soup with the fresh basil and serve with bread sticks.
Tip: Serve with ciabatta or another firm bread that can be dunked in the soup.
